Recipe: Baked Feta

After we had this in Santorini, I fell in love.  This is my favorite new appetizer.  Here is the recipe I came up with after we had it several times.

Large slices of feta (Comes in a big chunk, just slice it to be ~1/4-1/2” thick)
Tomatoes, chopped or crushed tomatoes or sauce
Garlic, minced
Olive Oil
Oregano (Mediterranean if you have it)
Red pepper flakes – optional
Green peppers, chopped – optional

Preheat oven to 400.  You can adjust this recipe to make as much as you want.  I use small baking dishes and use a couple.  You can also just use sheets of aluminum foil – if so, seal foil into a packet.

Put a slice of feta in baking dish.  Put chopped tomatoes on top.  Season lightly with coarse salt.  Sprinkle with oregano and garlic.  Drizzle with olive oil.

Bake for 15-18 minutes.

Serve with crusty bread.
