Pineapple Tacos

Taco Tuesday! Just kidding. It’s not Tuesday. I’m happy with every day being taco day. After traveling to Mexico several times, I have put together my own pineapple taco recipe borrowing from lots of good tacos that I have had.

I love to pick up a rotisserie chicken from the deli and then shred it. They are so good and buying pre-cooked makes throwing together delicious tacos so easy.

This recipe highlights pineapple, but you can easily substitute something else like mango or avocado.

Super easy weeknight meal. Taco Tuesday, but switch it up a little bit with pineapple.

Ingredients

  • 1 package Corn tortillas
  • 1 Rotisserie Chicken
  • 1 cup Pineapple finely chopped
  • 1 Jalapeño finely chopped
  • 1/4 cup Red Onion chopped
  • Green salsa
  • 1 tbsp Cilantro rough chopped
  • lime wedges

Instructions

  • Pull chicken from the rotisserie chicken.
  • Finely chop jalapeño, onion and pineapple.
  • Assemble tacos and squeeze lime juice on top.
