I have decided foil packet cooking is my favorite. It is easy, quick, tasty and versatile. I love Greek flavors, so i thought I would try to create something Greek-ish for packet cooking. I added some broccoli just for some healthy veggies. Just do one packet per person and you can scale this recipe to be for one person or lots of people. Also, by cooking this way, I can customize my husband’s packet since he is very picky. When I made this, his was just a chicken breast with salt and pepper.
I am also trying to eat healthier and am going gluten-free for April. I previously thought I might have celiac, but I don’t. However, I suspect I might have an intolerance and am just going to try it. Eliminating a ton of carbs from my diet cannot be a bad thing. I’m also trying to follow the paleo diet. So, for paleo, eliminate the feta.
Grape Tomatoes (halved)
Lemon Juice (1-2 lemons)
Garlic, minced (1-2 cloves)
Feta Cheese Crumbles
Salt & Pepper
Heat oven to 400 degrees. Lay out several large sheets of aluminum foil and spray with nonstick cooking spray. Center chicken breast on each sheet and add broccoli and tomatoes around it. Add a little garlic on top of each one. Then drizzle with olive oil and lemon juice. Sprinkle with oregano, salt, pepper and feta.
Fold up the foil into packets and cook for 45 minutes.
