Apple & Cinnamon Oatmeal

This oatmeal recipe is from my Mom and I absolutely love it. Nothing beats homemade oatmeal. She used to make this for me a lot when I was recovering from my surgery. Today was a snow day for the kids and I made it for them and they loved it!

Ingredients:
1 large apple (chopped finely)
dash of salt
4 ½ cups water
3 cups old-fashioned oats
3 Tbsp. raw honey (Original recipe called for 6 Tbsp. brown sugar)
2 tsp. cinnamon

Instructions:
Put apples and salt in large saucepan or Dutch oven and add water.  Bring to a boil and then stir in the oats. Reduce heat to medium and continue cooking until oats are tender and oatmeal is thick, about 5-10 minutes.  Remove from heat and stir in the honey and cinnamon.  

Note: This oatmeal is great reheated and I go ahead and portion out the leftovers into small glass bowls, so I can grab one and reheat quickly.  (I use these from Crate & Barrell and they have been one of the most useful things in my kitchen. Right now they are on sale for $20 for a set of 12!)
