Apple & Cinnamon Oatmeal

This oatmeal recipe is from my Mom and I absolutely love it. Nothing beats homemade oatmeal. She used to make this for me a lot when I was recovering from my surgery. Today was a snow day for the kids and I made it for them and they loved it!

This oatmeal is great reheated and I go ahead and portion out the leftovers into small glass bowls, so I can grab one and reheat quickly.  (I use these from Crate & Barrell and these from Pyrex and they have been one of the most useful things in my kitchen.)

Apple Cinnamon Oatmeal

Ingredients

  • 1 large apple chopped finely
  • 1 dash salt
  • 4 ½ cups water
  • 3 cups light old-fashioned oats
  • 6 Tbsp. brown sugar
  • 2 tsp. cinnamon

Instructions

  • Put apples and salt in large saucepan or Dutch oven and add water. Bring to a boil and then stir in the oats.
  • Reduce heat to medium and continue cooking until oats are tender and oatmeal is thick, about 5-10 minutes.
  • Remove from heat and stir in the honey and cinnamon.

Notes

Instead of brown sugar, you could substitute 3 Tbsp. honey.
